Honey-processed in Costa Rica's Central Valley, grown in the shadow of the region's volcanoes. This one leads with cocoa and toasted praline, backed by real body, with cooked cherry and a clean, complex acidity running underneath. Dark enough to bring out genuine chocolate depth without losing the fruit. Sweet without going saccharine. Sounds like trouble, drinks like dessert.
